Colonial Pumpkin Pie - Revisited

Finally, the picture I mentioned in my last entry of the pumpkin pie that I made for Thanksgiving. If you read Freeepeace's journal, you may have already caught a pic of a slice of the pie. I'm a little disappointed in how the pie turned out. It was a bit runny in the center. I am not used to baking in a gas oven. The recipe said if a knife came out clean the pie was done. As you can tell by this photo, I tested the center with a knife. It came out clean but when it came time for cutting the pie, it was a bit runny. However, this is the best pumpkin pie that I have ever had. It is more like a souffle than the dense concoction you usually find in most pumpkin pies where condensed milk is used. This recipe calls for eggs and cream. Yummers!

I posted the recipe for this pie last Thanksgiving but that was before the advent of my digital camera. So, I wasn't able to post a picture. This year, I also found a link to the website for the cookbook that you can find the recipe in. It's the 1992 version of the Pennsylvania Grange Cookbook. My ex-sister-in-law got it for me for Christmas one year because I was always having her make things for me when I would visit that she had gotten the recipes for from her 1972 version. At the time, you couldn't get the older versions. Now, they have them all available online, even those dating back to 1925. If you like down-home country cooking, this is a great cookbook to have in your collection. One of my favorites is Perogie Casserole. It's layers of lasagna noodles, mashed potatoes and cheese. It really does taste like perogies. I found a recipe for it online. It's not quite the same though. I don't recall using cottage cheese and the shredded cheese isn't stirred into the potatoes. It's layered separately.

You can also find the recipe for the crust (No Fail Pie Crust) in the cookbook and in my previous entry as well. Oh yeah! I only use homemade pie crusts. It makes a world of difference and I am a pastry fiend. Good thing too. I didn't pay attention to the number of shells the recipe would make and I have the remaining dough sitting in the fridge. I think I'll make an apple pie and another pumpkin pie and take them into work tomorrow. I sure do miss my roommate's food processor though. It makes dough in a snap. Having to mix it by hand is a bit more time consuming.

I must say that your pie looked great. Can't tell about the taste since it's gone already and none saved for me :-(   But knowing you, it had to have been good. Looks good enough to eat. LOL  We have really good luck putting all the ingrediants in the blender and letting it process. Pour in the shell and get that little wonder in the oven before the goodies start to separate. :-)

I'm very impressed. I've never made a decent pie. I feel like grabbing that sucker right out of the photo. : ) Pumpkin pie is my absolute favorite with a lot of whipped cream on top. Yes, I saw a piece in Freee's journal. She posted about having it for breakfast, lunch or dinner and I laughed because that's what'd I'd had for breakfast that day. Good looking pie...... : )

I actually made the crust for my FIRST pecan pie (the leather one), but then used a store-bought one for the second.  Truthfully, I couldn't really tell the difference.  I'm not a big pie-crust fan, never have been.  Which is why I liked the pumpkin pie I made this year.  It was crustless, low fat... VERY good and I didn't feel guilty eating it.  Lisa  :-]

For the first time ever I purchased Pillsbury pre-made crusts.  I was so surprised how good they were and it saved me all that time and effort.  Yours looks so good!

I'm just not a big enough pie crust fan to put the energy into making it myself. Sometimes I wish I were more motivated, but then again...

WOW!  I am impressed that you make the pie crust by hand!  I am a failure at that even though I consider myself an expert baker.  For some reason, pie crust always comes out terrible for me.  So, GASP, I buy the frozen kind.  Hee-hee!  Your pie looks absolutely delicious though!!!  I made mine this year with some dark mollasses and it tasted so yummy!  I think I will go have another piece right now.  Gee thanks Robbie!  :)

Looks lovely...but I just...eeesh. Don't like pumpkin pie. I know, I know...but I love Apple, Blueberry, Chocolate Creme, lemon, and strawberry frozen yogurt pies. LOL

I lOVED my version of the Pennsylvania Grange Cookbook.... I don't know what year it was, and it was CRAMMED full of all the recipes I had collected over the years. My X who could care less still has it................... Thinking of you, judi

mmmmmmmmmmmmmmmm! This is a must have at our Thanksgiving, good ol pumpkin pie along with a pecan one. I put some chocolate chips in the pecan pie this year and it was heavenly!

FOOD PORN!!!  LOL  You know, I was really disappointed this year because the only real food photos I took were of my collared greens. And honestly, I don't even LIKE collared greens.  LOL  I guess I was too busy enjoying my food to take photos of it.  So I get to drool over YOUR photos this year - good thang!  :D
